Like many chefs, Tom has always had the dream of running his own restaurant. In 2023, this dream came true, when he saw that a property previously called the Kings Head was empty and available for lease.
With the help of his wife, in-laws and friends, the dream was converted to a reality and the doors to Parsonage 53 were opened in October 2023.
Tom has brought with him trusted members of staff from other venues with whom he has built a firm relationship, which has benefited him without doubt.
After commencing his career in and around his home town of Sidmouth, Tom moved to Gloucestershire where he took on a Commis role at Calcot Manor. After four years he took a step sideways and joined the opening team at the Kings Head in Cirencester, which is where he met the first of his current team.
After plenty of pleading, the Calcot collection managed to persuade Tom to rejoin them as a Junior Sous within the group. Tom worked his way internally up the ladder, before being promoted to Head Chef at the Painswick. It was during this stint within the collection that he began courting his now wife Georgina.
In 2019, Tom moved to the Potting Shed in Crudwell, where he met another two members of his current team. It was here that he perfected the required skills to still produce and serve food to an exceptional standard when incredibly busy.
In 2022, Tom slipped across to the other side of Tetbury to the Kings Arms in Didmarton, another that required Tom to continue the perfection of speed within service, especially when being only a stone's throw from the world famous Badminton Estate.
Georgina and Tom married in December 2022, and he left the Kings Arms in 2023, in order to accommodate some more family time with Georgina and first son Reuben. In August 2023, the Kings Head in Dursley was noticed to be empty and after much deliberation between the family, a lease was signed, and the doors opened in mid-October.
The opening wasn't plain sailing at all with their second son being born the day before the opening evening. Not to phase the pair, they were still here for the opening of the doors, with Barney in Georgina's arms. Our guests, weren't too sure as to what to comment on first, the adorable ball of fluff or the exquisite delivering's of the restaurant.
